Chocolate-Cherry Pecan Bread
This rustic artisan loaf, studded with cherries,
pecans and chocolate chips, is a decadent
alternative to traditional artisan breads.

cups King Arthur Unbleached All-Purpose Flour
2 1/4 cups King Arthur 100% White Whole Wheat Flour
2 cups water
2 teaspoons salt
2 teaspoons instant yeast
3/4 cup dried sweet cherries, chopped
1/2 cup chocolate chips
1 1/2 cups chopped pecans, lightly toasted
Mix together all of the ingredients, except the
cherries, chocolate chips, and nuts (by hand, mixer,
large capacity bread machine or food processor) till
you've created a smooth, elastic dough. Add the
remaining ingredients, kneading until they're evenly
incorporated. Place the dough in a lightly greased
bowl, cover, and let rise for 1 to 1 1/2 hours,
until very puffy.
Divide the dough into three equal pieces, and shape
into rounds. Let rest for 15 minutes, then form into
oval loaves and place on a greased baking sheet.
Cover the loaves and refrigerate for 4 to 16 hours
before baking.
Preheat your oven to 425°F. Remove the loaves from
the refrigerator and let rest, covered, for 30
minutes. Slash the tops of the loaves and spritz
heavily with water. Bake for 10 minutes, then reduce
the heat to 350°F for an additional 20 to 25
minutes, till the bread is dark brown. Remove from
the oven, and cool on a wire rack. Yield: 3
loaves.
