Hot Chicken Salad in Pita
2 whole chicken breasts, skinless and boneless, cut in thin 2-inch strips
2 tablespoons salad oil
1 medium onion, sliced
1 cup sliced celery
1 cup chopped green pepper
1/2 cup sliced mushrooms
1/2 teaspoon salt
1/8 teaspoon pepper
3 tablespoons mayonnaise
2 tablespoons spicy brown mustard
8 Romaine lettuce leaves
4 large pita breads, cut in half
In large frypan, place oil and heat to medium temperature. Add chicken and
stir-fry about 2 minutes or until lightly browned. Add onion, celery, green
pepper, mushrooms, salt and pepper; cook about 5 minutes. Add mayonnaise and
mustard, stirring constantly for about 1 minute or until heated. To serve, line
pita bread halves with lettuce and stuff with chicken mixture. Makes 4 servings.
