Stuffed Shells3 pounds ricotta cheese
6 eggs
1 pound grated mozzarella cheese
1 pound large shells
Romano or Parmesan cheese, sprinkled to taste
2 tablespoons chopped parsley
Marinara sauce
Boil a large pot of water and cook the shells al dente.
Mix all the filling ingredients until blended well. In a
shallow baking dish, coat bottom with a thin layer of
marinara sauce. Take each shell and fill it with 2
tablespoons of filling and place in the pan, side by side.
When the pan is full, cover with the sauce. Bake in a
400F. degree oven for 45 minutes. Let stand 10 minutes
before serving.
