Butterscotch Cookies
2 eggs
2 cups brown sugar
3/4 cup butter
3 1/2 cups pastry flour
2 tbsp baking powder
1/2 tsp salt
1 tsp vanilla
1 cup chopped walnuts
Beat the eggs and add the sugar until it is well dissolved.
Melt the
butter and add it to the eggs and sugar mixture. Sift the
flour before measuring, then add the baking powder and salt
and silt slowly into the first mixture. Add the vanilla and
finely chopped nuts. Put this through a cookie press and bake
or shape into a cylinder and let stand in the refrigerator
overnight. Cut into thin slices. Place on greased baking sheet
and bake at 375 for 12-15 minutes. 4 dozen
