Garden Bake
1 cup chopped zucchini
1 large tomato, chopped (1 cup)
1 medium onion, chopped (1 cup)
1/3 cup grated Parmesan cheese
1/2 cup Bisquick® Reduced fat baking mix
1 cup fat-free (skim) milk
1/2 cup fat-free cholesterol-free egg substitute
1/2 teaspoon salt
1/8 teaspoon pepper
Heat oven to 400°. Grease 9-inch pie plate and set aside.
Saute zucchini and onions in a nonstick skillet which has been
sprayed with nonstick cooking spray; saute about 3-5 minutes
or until slightly softened. Combine with tomatoes and cheese
and spread over bottom of pie plate. Stir remaining
ingredients until blended. Pour into pie plate over
vegetables. . Bake about 35 minutes or until knife inserted in
center comes out clean. Cool 5 minutes.
