Creamy Cucumber Yogurt Dip
1 cucumber,peeled,seeded and finely chopped
salt
1/4 cup chopped fresh chives,divided
1 8 oz package cream cheese,softened
1/4 cup plain yogurt
1 tbsp fresh lemon juice
1 1/2 tsp dried mint leaves
freshly ground black pepper
Lightly salt cucumber in a small bowl and toss.
Refrigerate for 1 hour.
Drain cucumber,dry on paper towels.
Set aside.
Reserve 1 tbsp chives for garnish.
Place remaning 3 tbsp chives,cream
cheese,yogurt,lemon juice , mint and pepper in a
food processor or blender.Process until smooth.
Stir in cucumber.Cover and refrigerate for 1 hour.
Sprinkle reserved chives over top.
