Carnitas

Use this cooked pork in tacos, burritos, tostadas, sandwiches or as a main dish.

1-3/4 to 2 lbs. pork butt
Water
1/2 medium onion, cut in half
1 large garlic clove
1 teaspoon salt
¼ teaspoon dried leaf oregano, crushed
¼ teaspoon ground cumin
Salt or garlic salt

Makes about 4 cups of shredded meat
• Place meat in a 3-quart saucepan. Add water to cover, onion, garlic, salt, oregano and cumin. Bring to a boil; reduce heat. Cover and simmer 2 hours.
• Preheat oven to 350°F (175°C). Drain meat, reserving broth for another use. Place meat in a baking pan. Sprinkle meat evenly with salt or garlic salt. Bake 45 minutes. Remove from oven.
• While still warm, use 2 forks to shred meat.
