Tacos with Chicken or Pork

corn tortilla (about 20).
1 pound boneless pork or chicken, cut into
bite size pieces
1 medium onion, sliced
4 tablespoons fresh coriander, chopped
1 garlic clove, peeled
black pepper-to taste
4 cups of water
oil for frying
Salt to taste

Place in a saucepan the pork or chicken, garlic, salt, pepper and the water. bring to a boil and continue cooking for about 20 minutes until the meat is tender. Drain. In a separate bowl mix the coriander with the onion. Place some of the cooked meat in a tortilla and top with the onion-coriander mixture. Add some of your favorite hot sauce or avocado dip. Roll and enjoy. If you prefer you may fill the tortillas with the meat and then close them with toothpicks. You may lightly fry them in some oil, and then top them with the onion-coriander mixture and add hot sauce or avocado dip. Serve with warm corn and black beans
