Italian Artichoke.
Artichoke-2 large.
Olive Oil-2 cups.
Salt and Black Pepper-to taste.
Garlic-1 clove whole, peeled.
Clean and dry the artichokes. Remove 1/2 of the outer
leaves. Cut off the tips of the remaining leaves still on the
artichoke. Slice the artichoke in half vertically. Place the
olive oil in a sauce pan. Bring the oil to a low- medium heat
so that you can simmer the artichoke halves. You must scoop
out the choke from the artichoke before you place it in the
oil! Place the artichoke halves in the oil. Cook slowly for
1/2 an hour. Flip the artichokes over and place the garlic
clove in the pan with them. Simmer them for another 1/2 an
hour. Check to make sure they are tender. Drain completely and
sprinkle with a little salt and pepper. Serve at room
temperature.
