Florentine Spinach.
1/4 c. butter
1/4 C. flour
1 1/2 C. milk
3 eggs
Salt and Pepper
3 cups cooked spinach
Make a white sauce of the butter, flour and milk. Beat the
eggs slightly and add to the white sauce with salt and pepper
to taste. Add spinach, finely chopped. Pour into a buttered
mold, cover and bake in a pan of hot water in a moderate 350
degree oven. This should take about 1 hour.
