Delmonico Potatoes6 Med potatoes, peeled, diced &
boiled
4 T butter
4 T flour
1/2 t salt
1/4 t pepper
1 cup cream or evaporated milk
1 cup milk
1 1/2 cup shredded cheddar cheese (divided)
6 T bread crumbs
6 pats butter
Paprika for top
Melt butter in sauce pan, remove from heat, stir in flour,
salt & pepper. Stir until smooth, gradually stir in cream &
milk until smooth. Place back on heat (low) and add 1 1/4 c.
cheese stirring until melted. Pour sauce on potatoes & place
in a greased 2 1/2 quart casserole dish. Mix bread crumbs with
remaining cheese & butter, top potatoes, sprinkle paprika.
Bake at 350 degrees for 25 to 30 minutes.
