Gently fry some curry powder in oil in a good saucepan to get
the flavours out and add pressed garlic to your own taste (I
use loads). Take it off the heat and put pealed prawns in. Let
that rest since prawns shouldn't cook. This is just like a
marinade for them...
Meanwhile, cook the pasta of your choice and chop up some
avocado which you then put in another saucepan. Add cream (as
light or double as you want - as long as it is for cooking)
and gently mash the avocado into the cream with a fork to make
a sauce. Then at the last minute when your pasta is ready, add
the curry/prawn mix and just heat through...
